Cherry Chocolate Ice Cream
Do you have a sweet tooth like I do?
Sometimes I feel like I’m a ‘chocolate monster’ roaming the kitchen, searching the cabinets and the fridge for anything resembling a dessert! (hmm, can I do something with this cocoa powder?? hah) And I admit, it’s not pretty! I’ve found that there’s no better way to fight off a sweet tooth than by making a batch of my own healthy, homemade fruit ice cream. Having frozen pitted cherries on hand means I can make this amazing cherry chocolate ice cream all year long!
Whenever I find a sale on frozen fruit, I stock up! I love having fruit in the freezer to use in smoothies or to make ice cream or frozen yogurt, but it always disappears so quickly! Strawberries, raspberries, blueberries, and peaches always seem to be available at my local grocer, but I’m psyched when I come across frozen cherries!
Obviously, if I can get my hands on some juicy, fresh cherries, I’ll make the extra effort of pitting and freezing them myself. It definitely take this (typically) summertime treat to the next level!
Ingredients :
- 1 medium banana, cut into chunks
- ¼ cup unsweetened almond milk
- 1 cup frozen organic pitted cherries, chopped, divided use
- 2 Tbsp. dark chocolate chips, or chunks, coarsely chopped
Instructions
Place banana in plastic bag; freeze for 4 hours, or until completely frozen.
Place almond milk, ½ cup cherries and frozen banana in blender; cover. Blend until smooth.
Add remaining ½ cup cherries and chocolate; mix well with a spoon or rubber spatula.
Pour into a freezer-safe container; freeze until set.
