Spicy Lime and Jalapeño Coleslaw
When it’s Taco Tuesday and you can’t get enough of these shrimp tacos because the slaw is so good! Holy cow, where has this spicy lime and jalapeño coleslaw been all my life?
This easy coleslaw recipe pairs perfectly with shrimp tacos or these fish tacos!
- 4 cups green cabbage, shredded
- 1 meduim red bell pepper, thinly sliced
- 1/2 cup chopped cilantro
- 1 small jalapeño pepper, seeded, minced
- 3 Tbsp olive oil
- 2 Tbsp freshly squeezed lime juice
- 1.5 tsp ground cumin
- Kosher salt (to taste)
- black pepper (to taste)
Instructions
Combine the cabbage, bell pepper, cilantro, and jalapeño in a large bowl and toss to combine. Set aside.
In a small bowl whisk together the olive oil, lime juice, and cumin to make the dressing
Pour the dressing over the cabbage mixture, add salt and pepper to taste, and toss to combine. Cover and refrigerate at least 1 hour and up to 5 hours. Toss again before serving.
