Healthy Berry-Banana Ice Cream
If you’re like me and have a sweet tooth, sometimes (ok, a lot of times) you find yourself craving ice cream!
Am I right?
Have you tried making a healthy ice cream alternative out of frozen fruit? You can do this with just about any frozen fruit, but here’s my 4-ingredient recipe for berry-banana ice cream. It’s so good and super easy!
I recommend eating this as soon as you make it. If you use frozen fruit it will have the consistency of soft serve ice cream and you can serve immediately! f you use fresh fruit, you can transfer the ice cream to a freezer container and freeze until desired consistency. But just know that this fruit ice cream will freeze solid. So if you want to eat it like ice cream later, you’ll have to let it soften a little bit outside of the freezer. And waiting for it to thaw a little can be the hardest part!
Or, if you have the molds you can easily make popsicles! Just fill the molds with the ice cream and add your handles (or wooden sticks), freeze for a few hours and enjoy it as popsicles.
- 2 bananas, cut into 1-inch slices and frozen
- 1 cup frozen berries of your choice (I used a mix of raspberries and blackberries)
- 2 Tbsp Unsweetened Vanilla Almond Milk
- 1/2 tsp vanilla extract
Here are the Directions:
Place banana slices on a plate, separating each slice. Place slices in freezer for at least 2 hours.
Remove berries and bananas from freezer and place in a food processor and blend until they are the consistency of soft serve ice cream.
Add almond milk (more or less for desired texture) and vanilla extract and blend until smooth and well-mixed. This will take about 5 minutes of continuous blending.
Scoop with ice cream scoop and serve.
